Canopy management for sparkling grape production

Utilisng analysis of juice press fractions and the base wines made from these, a preliminary method of determining quality of juice for sparkling wines and base wines from their phenolic profiles was devised. Comparison with the phenolic profiles of juice and base wines from a leaf removal trial indicated that whilst the traditional measure of total phenolics showed little response, there was an impact on individual phenolics from the leaf removal treatments.
